I had heard of mini pot pie recipes, but I thought I would take my own spin on this. I was afraid of it not turning out well, but it was really good. My kids LOVED it. Here’s the recipe for Cheddar Biscuit Pot Pie:
What you need:
1 Box of Red Lobster cheddar biscuit mix
1 Can of Cream of Chicken soup
1 1/2 cup of frozen mixed vegetables (thawed)
1 cup of small diced cooked chicken
Mix Cream of Chicken soup, mixed vegetables and cooked chicken together and set aside.
Prepare Cheddar Biscuit mix as directed on the box.
Preheat oven to 350 degrees.
Use ice cream scoop to place biscuits in lightly greased muffin pan, pressing the biscuits to make a bowl for filling.
Fill “bowls” with the cream of chicken mix.
Put in oven for 15-20 minutes, or until biscuits are golden brown.
When I made this recipe, it made 9 servings, so double it if you want more. Let us know if you like this recipe!
